Extended family sessions are extra special because it is a huge opportunity to capture multiple generations. We never know what tomorrow holds with our loved ones, and often a family has come back to thank me for capturing someone who is no longer with them. I understand it can be a lot to get that many schedules coordinated, but I highly recommend photographing multi-generations when you have the chance to.
